Old Neapolitan pizza masters, given the spreading of fast-food chains and the large use – sometimes inappropriate- of the denomination “Original Neapolitan Pizza”, decided in 1984 to found an association based on a protocol in order to protect and increase the value of the pizzas produced and processed according to the old Neapolitan traditions and customs. This was the beginning of Associazione Verace Pizza Napoletana (AVPN).
The following Pizzerias in Tokyo are members of the AVPN. To become a member of this association the venues have to comply to some strict regulations to make sure that the pizza has a Neapolitan authenticity. Have a look here on some of the requirements for preparation.
